Instructions

  2. While the lentils are cooking, heat the oil in a skillet over medium heat. Add the cumin seeds and cook, stirring, until fragrant, about 1 minute. Add the onion, garlic, and ginger, and cook until the onion is softened, about 5 minutes.
  3. Stir in the turmeric, coriander, paprika, cayenne pepper (if using), and salt. Cook, stirring, for 1-2 minutes, to let the spices bloom.
  4. Add the diced tomatoes and their juices to the skillet, and bring the mixture to a simmer. Cook for 5 minutes to let the flavors meld together.
  5. Drain any excess liquid from the cooked lentils and then stir them into the tomato mixture. Cook for another 5 minutes, or until the curry is thickened and heated through.
  6. Remove the curry from the heat and stir in the chopped cilantro. Serve hot over rice or with naan bread.
